"Ian is enjoying eating whole plant-based foods but he is finding it time consuming to make everything from scratch. A whole foods diet does require more preparation time, so being prepared, doing all your shopping ahead of time, and making big batches to last the week are important habits to get into. Also the more you practice the faster you get. So if like Ian, food preparation takes you a long time, do not despair! I even invented a few things. Bridget and I collaborated to meet the pineapple challenge (aka I came up with the salad idea and she did the rest). Can't really remember the amounts but it's a salad so it's kinda a free for all. (See previous posting for her recipe!) Left: Pizza a la Raw, made with combining bases like basil ricotta cheeze, basil sun pesto, lemon thyme sun dried tomato sauce on a convenient Ezekiel Wrap (aka just pop in the oven) sprouted grain Ezekiel Wrap! All participants had the option to participate the a "grand" weekly challenge...which was...to come up with a creative use for leftover pineapple from pizza a la raw using some flavour combining hints (i.e. Pineapple LOVES...Basil - sounds strange I know but it's good!) and using only ingredients from the the provided shopping lists. Jessica and Bridget, co-founders of theveganproject.ca came up with creative & delicious creation. Plus they included flax oil an excellent source of omega-3 which we all need to incorporate into our everyday diets. Hey Vancouver!!!
