Tripe Raw Chocolate Cheezecake is dedicated to my dear friend Danette Moule. Being able to mindfully enjoy 3 layers of raw organic chocolate yuminess, is the epitome of GLOW while fully enjoying life – and being kind to our earth. Like this dessert, Danette truly embodies GLOW by enjoying life to the fullest everyday while making a positive difference in the world. This girl divides her time between completing her masters in Environmental Studies at SFU, mountain biking, skiing, running, hiking, baseball, volunteering with first nations groups and environmental non profit organizations, enjoying music, spontaneous road trips and her cats. Did I mention she is a talented piano player, everyday whole foods chef, salsa dancer and a great friend? What I LOVE about Danette is that she is always there to listen, offer empathy, support, enjoy great music with (from Radiohead, to classical and Latin), share delicious whole food meals and explore Vancouver’s spectacular nature. I made Triple Raw Chocolate Cheezecake for Danette’s 28thbirthday and enjoyed it over great conversation with our friend Celina. We also discovered that you can have your cake and eat it too since you can enjoy a delicious dessert that is very healthy :-) Here is a recipe for another spring time inspired dessert that can be made in minutes with avocados and a few of your everyday ingredients from your pantry. Today’s recipe was inspired by at The Vegan Project. When I asked for Swiss chard inspiration on Facebook, she was the first one to respond with an idea.
