I received some blackberries from my beautiful sister-in-law Parrish and was inspired to create! This simple dish tastes good because it follows the laws of flavour attraction as noted above. While the yogurt is somewhat of a time investment it will last 3 -4 days in the fridge because the lemon acts as a preservative. While young Thai coconuts are not exactly affordable, you can get them for lower costs at Asian grocers or Superstore (where I bought mine :-) - and are a nice treat to celebrate the end of summer fruit. Blackberries LOVE Raw Organic Chocolate I have been buying fresh organic figs now on sale at Whole Foods in Vancouver which are now only $2.99/ lb. I also spent the weekend picking delicious superfood FREE wild and local blackberries. So I wondered if I could come up with a decadent uber-healthy seasonal organic local dessert made a la affordable, quick and easy. Here's what I created - doing my best to meet all the above criteria! This recipe was partially inspired by Genny Bourdage's chocolate fig pudding recipe.

I am delighted to have been getting enthusiastic feedback from all my posts with tips on how to include more Spring liver-loving greens into your everyday. Balance is important in life, so I thought I would sneak in a recipe for a delicious decadent dessert ~ still very healthy of course! :-) Left: Almond Butter Chocolate Mousse Cups. A co-creation with my friend Andrea Potter from Rooted Nutrition. Avocadoes LOVE Carob (psst....less $$ than Raw Cacao) In my last spring inspired dessert blog post we learned that avocadoes love limes. As well we discovered that you can have your cake and it too in that you can enjoy a delicious dessert that is very healthy :-) Here is a recipe for another spring time inspired dessert that can be made in minutes with avocadoes and a few of your everyday ingredients from your pantry. Step #1 ~ Gather and Measure all Ingredients Start with 1/4 avocado, 1 tbsp carob powder, 1 tsp raw organic honey* and1 tbsp coconut oil. (2 minutes) * For health and environmental reasons, it is very important that if you use honey, it be raw, organic and best if you can source locally. If you do not eat honey you can replace with a dark maple syrup. 3 Minutes...and you have an Everyday Healthy Dessert Step #2 ~ Mix all ingredients together with a spoon. Yum! Taste test, adjust flavours as needed. You may be inspired to add some vanilla extract or cinnamon and experience how that tastes. Notice your personal preference. (1 minute or 2-3 minutes with taste experimenting). This is an everyday dessert so yummy it can stand on its own. You are welcome though to add a few more everyday delicious toppings. And I promise it is easy :-) Your Everyday Cuisine LOVES...Affordable Shredded Coconut For example, you can use one of my favourites....Organic affordable shredded coconut. Coconut LOVES...Carob or Raw Chocolate Step #3 ~ Scoop your chocolatey mousse into a wine glass and top top with shredded coconut. (30 seconds) Dehdyrated Sprouted Buckwheat ~ A Versatile Everyday Staple Step #4 ~ Next, I had some dehydrated sprouted "buckwheaties" that I have on hand. So I added it to my "crunchy mix" along with the shredded coconut. (30 seconds) Like dehydrated sprouted sunflower seeds, dehydrated sprouted buckwheat are one of those things that are woth it to make ahead of time. Prepare in big batches and store in your fridge in glass containers. Buckweaties are worth it is because they are so versatile and affordable. I was originally inspired to make these after reading Ani Phyo's Raw Food Kitchen. She uses buckwheaties as a base for many of her sweet and savoury recipes like cereal, salads and more! Delicious LOVES...Parfait Layers It's always nice to split your mousse into two so you can layer your dessert. (1 minute) Fresh Mint Step #5 ~ I quickly steamed some raspberries to make a warm berry couli. (2 minutes) I always have some frozen berries on-hand in my freezer. It is best to pick fresh berries in the summer and store in your freezer for affrodable healthy deliciousness all year long :-) Step #6 ~ Top with Fresh Mint (2 seconds) One of the flavours I have chosen to focus on in my Spring cuisine is fresh mint. Wjy? This refreshing herb pairs well with spring flavours like asapargus, peas. swiss chard, dandelion leaves and everyday affordable veggies like beets and carrots. This is Secret #1 to make everyday healthy convenient. Voila! There you have it. A healthy and quick dessert in a total of 5-10 minutes + 2 seconds. Deceivably Boring Sprouts a Secret to Making Everyday Healthy Delicious It seems that every time I write about how to use the quintessential affordable superfood ingredient, ~ I get enthusiastic feedback. So my dehydrated sunflower sprouts were part of my inspiration in putting together a last minute birthday cake for my brother last weekend. I made a big batch of dehydrated sunflower sprouts almost a month ago now (click here to read previous blog post on how to make). Stored in glass jars in my fridge, they are still acing the test of everyday healthy, convenient, delicious and affordable ~ above and beyond!.

She served us a delicious raw "hot chocolate" Mexican style with blended dates, agave syrup, cashews, raw cacao powder spiced with cinnamon and cayenne pepper. Cacao originates from Central America and has been consumed as medicine and for spiritual purposes for centuries by the indigenous people of the area. Traces of Theobromine, an alkaloid found in raw cacao that gives this blissful substance it's superfood quality, have been found in bowls dating as far back as 1900 -1500 BC in Chiapas Mexico. The Greek prefix, "Theo" refers to the "study of God" and "Bromine" originates from the Greek word "broma". According to my archeologist friend Jay, author of the blog Not the Discovery Channel, who loves research more than anyone I have met and has taken on to researching food topics for me ;-), broma means "oats". But I prefer, the Natural News' article translation of broma: "food". Because this means that, theobromine, can translate to Food of the Gods, instead of Oats of the Gods. Actually...come to think of it, I like the idea that the divine equivalent of morning oatmeal would be chocolate ;-) |
