I love the process of soaking things and cooking them..it's fun...takes a little planning but always worth it! Taste sooo much better than canned!
Tuscan bean dip, here goes..
This simple act of soaking then cooking my beans in the middle of a Monday afternoon has inspired me to reflect on what's important.. Suzanah LOVES the flavor combo of rosemary, olive oil, garlic, white bean..delish!
Ate a bunch of White Bean Dip out of the bowl, then with carrots and ryvita crackers. Voila: lunch accomplished. Was excited to share with my sweet pea, Robert..Made a soup from it for dinner with a big salad.
Day 1: Easy as raw vegan cheez cake!
Suzanah is reaping the benefits of making versatile dishes ahead of time like bean dip to use quickly and deliciously the following day. This is Secret # 2 for Quick for Everyday Healthy.
Day 2: Same Tahini Toast as yesterday...I have a feeling I won't be getting sick of this combo..gave me good solid energy for my morning Muay Thai workout at Dojang StudioLunch: BIG Veggie Italian Sandwich on Mix Bakery multi-grain sour bread..(.best bread around for veggie sandwiches!) I loaded it with Bean dip again, and tons of veggies..Robert and I split it..yum! I really felt good about getting all those healthy veggies in..yeah!
For dinner I made up a batch of sundried tomato spread with loads of fresh basil and parsley..and used it as a raw sauce to accompany some kamut orzo I had in cupboard..served it on a bed of Kale with slivered tomatoes...looked super purdy...I was happy to present it to Robert for dinner..
Robert (Suzanah's partner and owner of Dojan Studios (dojang.ca) in Vancouver) described dinner as: "surprisingly refreshing!" "It tasted healthy!" aand lastly.."boy, you sure know how to cook raw food!"..hee, hee..would have gone well with a nice, dry chianti!
