"When I first received the shopping list and introductory information for the Whole Foods Challenge, the first words out of my mouth were “I’d rather get punched in the face than do this challenge right now”. I was recovering from the flu and bronchitis so I was very grumpy. The last thing I wanted to do was buy a bunch of weird oils and sweeteners, and devote a bunch of time to preparing new foods. But two days into the challenge, the delicious food has won me over. As I was already vegan before starting the challenge, this diet isn’t that different from my usual one so my energy level is about the same. But I’m having tons of fun preparing the recipes and getting creative with the Tuscan Rosemary White Bean Dip, Lemon Thyme Sundried Tomato Spread, and the Basil Ricotta Cheese.
