Rich sugar laden food like pastries and chocolates are everywhere in France. Yet you rarely see overweight people and they have some of the lowest rates of heart disease. I had the privilege of living in the land of everyday best food and wine you'll ever taste, for a whole 9 months (where my culinary passion began :-) While in living in France, I noticed that a big part of French food culture is including small amounts of very delicious rich foods, like chocolate after meals to satiate appetite.
Whereas in North America, most people have a habit of eating large amounts of tasteless fast food junk food like frozen pizzas, cookies, chips that leave you mentally hungry for more. So in my books, including rich tasting healthy treats that satiates, in moderation and consumed with mindfulness are a very very important of my whole foods lifestyle.

Here is my new creation, from my kitchen to yours, worthy of your everyday cuisine, as in made in 10 minutes or less, with your Everyday Pantry Ingredients, lots of affordable shredded coconut (if you live in Vancouver you buy a pound of organic sun dried coconut for only $4 at Organic Lives :-) I recommend making doubling or tripling the recipe and storing in air tight containers in your fridge/freezer, so they are available when you are on-the-go. Then instead of reaching for candy bars, enjoy these raw chocolate treats full of antioxidants that prevent premature aging by neutralizing toxic substances in our bodies from food and the environment that damage healthy tissue like collagen. Collagen is found in our skin and keeps it youthful and supple looking. Raw Organic Chocolate LOVES....Coconut, shredded & Affordable!
Here's to a healthier option than French pastries and Belgium chocolates, yet on par with taste ;-)
Raw Chocolate Macaroons
1/2 cup + 1/2 tbsp organic cold pressed coconut oil*
1/2 cup + 2 tbsp raw organic cacao powder
1/4 cup + 1 tbsp maple syrup
1 cup + 2 tbsp shredded coconut
1/2 tsp organic green stevia(optional)
dash sun dried sea salt (it's a good thing to always add a bit of sea salt even to sweet as it brings out flavours)
Lots & lots of LOVE
*You can replace of the coconut oil with coconut butter. Coconut butter contains some of the coconut meat and has a rich sweet taste. Your macaroons will taste better is you use coconut butter but can be hard to find and is very $$. You can also use melted cacao butter, which I am sure would make this recipe more divine. I haven't tried this yet..but it is next on my agenda ;-)
(1) If your coconut oil or cacao butter is hard first melt in your dehydrator or on low on your stove.
(2) Mix all ingredients together in a bowl and form into balls.
(3) Place on a tray in freezer and let harden. This only takes 5 - 10 minutes. Place in an air tight container to enjoy all week long.
(4) Most important of all...share with friends and family :-))
